Still waiting on Hermes, but Joan arrived. I've been using (well, trying to use) Lodge for years and it's always been problematic. Just how many years does it take to build seasoning necessary for food not to stick? With Joan out of the box I made duck legs with potatoes and shallots. Nothing stuck! It's also remarkably light for its size. Plan to get additional pans in different sizes. These are keepers.
I received my first Butter Pat which was the Joan model about 3 weeks ago and couldn’t be more pleased! Butter Pat customer service is also top quality just as their pans are! It is accepting the seasoning just as butter pat said it would and has to be the most beautifully styled pan I’ve seen yet and done so without additional parts attached to it. It’s important for anyone new to cast iron to understand that building seasoning which simply a polymerized layer of oil that gives the pan protection and subsequently a non-stick quality takes time and patience. It’s all about using some oil every time you cook, using the correct amount of heat for what your cooking and allowing enough time for the entire pan to heat up. I did extensive research on the other cast iron premium brands of today knowing I wanted to only choose one company to build a full set from. While the other cast iron companies cast a rough finish then machine smooth the cooking surface, Dennis (founder of Butter Pat) did it the hard way and sought to cast the pans smooth all over never giving up and putting it all on the line! As I seem to recall hearing in an interview he did, I believe the got down to the last two foundries in the United States before he found a foundry willing to try to make these very difficult to cast pans. I have great respect for Dennis and his company! I’ll borrow the sales pitch that Packard used... if you want to know what a Butter Pat skillet is like, ask the man/woman who has one!
I just received this skillet for Mother’s Day. It was really beautiful and came with excellent care instructions and a thoughtful letter. I immediately made biscuits to cook in it. I have two toddler boys and a newborn baby girl so I anticipate Joan will get much use over the years and I look forward to caring for it and experiencing its peformance. I don’t want to put it away so for now it will just join my other treasured cookware on top of the stove. Thank you for all the hard work that goes into making something so strong and well designed.
Got my Heather and loved her, so I made Joan my next choice. She arrived quickly but I had an issue with the finish. The customer service experience was excellent - quick, easy, with fantastic communication. A replacement was shipped out immediately and I've already fried with her. Beautiful performance. I couldn't ask for a better resolution. Will be so happy when I can splurge on another addition to my kitchen.
